i almost always use the Force Case options. this suits me fine.
however, i'd like to know if there's any easy way
to capitalise letters following the " - "?

example,

03 - the Man in the Ring --> 03 - The Man in the Ring
08 - in the Ring --> 08 - In the Ring
09 - on the Other Side --> 09 - On the Other Side

Sorry - there is no easy way. YOu can accomplish what you want by creating up to 26 rows in the custom creator (1 row for each letter if required).

e.g.

Row: 1
Search: ' - a'
Replace: ' - A'
